Ingredients: 2 cloves of garlic 1 onion 1 tablespoon vegetable oil 1 green pepper (in narrow rings) 3 tomatoes 4 tablespoons lime juice 1 tablespoon maple syrup 1 tablespoon oregano, chopped 0.5 bunch coriander, chopped 1 spring onion (in rings) salt pepper cumin
| | Instructions: Peel the onion and garlic, and chop both finely. Heat the oil in a pan. Sweat the pepper, garlic and onion for approx. 3 minutes in the pan. Wash, quarter, seed and dice the tomatoes finely. Mix the onion-mix, tomatoes, lime juice, maple syrup, oregano and coriander. Season to taste with salt, pepper and cumin. |
